Burrata Toast with Hot Honey

Creamy, crunchy, sweet, spicy, zingy – this burrata toast with hot honey has it all. It takes less than 10 minutes to make and looks super impressive, but it’s one of the easiest things you can make. Just toast your bread and load up the lovely toppings.

Burrata, if you’ve not tried it before, is an ultra-luxurious, creamier cousin to mozzarella. The inside is gloriously gooey and creamy – it is in fact a mix of mozzarella and cream – and it makes a wonderful creamy base for other, stronger flavours. In this case, we’re pairing it with sweet, spicy hot honey, fresh thyme and lemon zest.

This really does take about 10 minutes all up to make so is a wonderful lunch, or boujee breakfast idea. It’s also great for entertaining – slice your bread smaller to make little bite-sized versions!

Ingredients

Just a few simple ingredients go into this lovely little bite of deliciousness.

  • Burrata. This ultra-creamy, oozy, gooey cheese of dreams is pretty special. It’s a bit like a ball of mozzarella, but much creamier. It is actually mozzarella on the outside, and a mix of mozzarella and cream on the inside (or stracciatella). It’s mild, creamy and delicious and works so well paired with hot honey here. If you can’t find it, just use a regular ball of mozzarella, cottage cheese or ricotta.
  • Hot honey. Hot as in spice, not temperature, this fiery little sauce is one of my favourite condiments to have on hand. It’s incredibly easy to make and a simple drizzle will elevate so many different dishes. I have a whole post that breaks down how to make it which I recommend having a quick look at, or you can buy it at the store, or, simply mix 1/2 teaspoon of chilli flakes with 2 tablespoons of honey.
  • Bread. I like using a couple of good, chunky slices of sourdough here – or my favourite no-knead focaccia. But you can absolutely use whatever bread you have to hand.
  • Lemon. We’re using the zest here and it really lifts the toast to prevent it from being too rich, so don’t skip it.

How to make it

Start by toasting your bread (either in the toaster, under the grill or broiler, or in a pan). Chop your garlic clove in half and rub it all over the crispy, hot bread (this will impart a lovely subtle garlic flavour). Divide your burrata between your slices of toast, spreading it out so it oozes all over. Drizzle over your hot honey, then scatter over the lemon zest, thyme leaves and a little flaky salt. And it’s as simple as that!

Do you eat the skin of burrata?

Yes! The skin is just mozzarella, while the middle is stracciatella – a glorious mixture of mozzarella and cream.

What’s the best bread to use?

I love using a lovely thick slice of sourdough or focaccia for this recipe – you want something sturdy enough to hold the burrata and provide a gorgeous crunch.

What can I use if I don’t have hot honey?

You can use regular honey, maple syrup or sweet chilli jam or sauce. Or, make a quick hot honey by mixing 1/2 teaspoon of chilli flakes with 2 tablespoons of honey!

Burrata Toast with Hot Honey

  • 2 thick slices of bread (sourdough or focaccia are great)
  • 1 ball of burrata
  • 2 tablespoons hot honey sauce (or mix 2 tablespoons of honey with 1/2 teaspoon chilli flakes)
  • 1 lemon, zested
  • 1 tablespoon olive oil
  • 1 garlic clove, peeled
  • 2 sprigs of fresh thyme
  • 1 teaspoon flaky salt

Instructions

  1. Toast your bread. You can either do this in the toaster, in a pan, or in the oven. If you’re doing it in a pan, drizzle 1 tablespoon of olive oil into a pan wide enough to fit your bread and set it over medium heat. Drizzle the rest of the olive oil on the exposed side of the bread, then toast for a couple of minutes, flip, and toast on the other side for another minute. If you’re doing it in the oven, set your oven to 200C/393F grill (broil). Drizzle the olive oil on both sides of your bread, then place them on an oven tray under the grill (broiler) for a couple of minutes, flip and grill on the other side.
  2. Assemble the toast. Slice your garlic clove in half, then rub the exposed side all over each piece of bread. This gives a gorgeous garlic flavour, without being too overpowering. Tear into your burrata and divide it between your toast slices, spreading it all over. Drizzle 1 tablespoon of hot honey over the burrata on each piece of toast, then finish with the lemon zest, fresh thyme leaves and flaky salt. Eat right away while the toast is crunchy and the burrata is gorgeously oozy.

Notes

INGREDIENT NOTES: This toast is best with a lovely, thick piece of bread like sourdough, or focaccia would be wonderful too. Try to bring the burrata to room temperature if you can – its flavour is best when not fridge cold. Even getting it out for 10 minutes is fine!

SUBSTITUTIONS: If you can’t find burrata, a ball of mozzarella is absolutely fine. You could also use creamy feta or goat’s cheese, cottage cheese or ricotta. If you don’t have hot honey or don’t have the ingredients to make it, just use regular honey. Swap the thyme leaves for fresh basil, or dried thyme.

STORAGE INSTRUCTIONS: This is a recipe you want to make and then eat right away, just because the longer it sits, the more the burrata will begin to seep into the bread, making it a little soggy. It’ll still be absolutely delicious, but you’ll lose the crunch from the toast.
