Zucchini & Lemon Pasta

Add sliced zucchini, garlic, chilli & salt to a pan.

Cook, stirring, until softened.

And almost breaking down.

Add cooked pasta to the pan.

Add parmesan, basil & mint leaves.

Add pasta cooking water & lemon juice, then toss.

Until you've got a luscious, silky sauce.

Divide between plates.

Top with more parmesan & basil.

And enjoy!
