HOW TO: 

One Pot Vegetarian Lasagna Soup

Cook onion, garlic, mushrooms and seasoning.

Add beans, stock and canned tomatoes.

Stir to combine, then bring to a simmer.

Simmer until lovely and thick.

Add broken lasagna sheets.

And cover them in the sauce.

Leave to cook.

Add basil.

Then grated parmesan cheese.

Divide between plates & top with herby ricotta.

Serve and enjoy!
