Description

Crispy on the outside, oozy and gooey in the middle – these prosciutto-wrapped brie bites look boujee but are secretly very easy. Made in minutes in the air fryer, they’re fab when you want a party appetizer that feels fancy without any pastry or prep faff.

Ingredients

Scale

For the prosciutto wrapped brie bites -

  • 24 slices of prosciutto
  • 1 wheel of brie (roughly 120g - 150g)
  • Sweet chili jam (or use cranberry sauce, hot honey sauce)
  • Dried cranberries, finely chopped
  • A handful of fresh chives, finely chopped

To serve -

  • 2 tablespoons hot honey sauce
  • A handful of fresh chives, finely chopped
  • 2 tablespoons pistachio nuts, crushed or very finely chopped

Instructions

  1. Prep the brie. Slice the brie into small, even cubes. It’s easier to slice when it’s cold – warm brie will ooze and get messy quickly. Keep the rind on, or remove it if you prefer.
  2. Arrange the brie bites. Lay two slices of prosciutto on a board in an ‘X’ shape, overlapping diagonally. Dollop 1 teaspoon of sweet chili jam in the middle of the ‘X’, then place a cube of brie on top. Scatter a little of the chopped dried cranberries on top, then sprinkle over a few chopped chives.
  3. Wrap the brie bites. Fold and wrap the prosciutto tightly around the filling, then roll it into a ball in your hands. Try to make sure it’s tightly wrapped. Repeat with the rest of the ingredients. PRO TIP: I like to pop the bite into the fridge at this point for about 15 minutes, to firm up and set. This makes it less likely you’ll have any burst when you cook them.
  4. Air fry the brie bites. Place the brie bites, seam side down, in the basket of your air fryer. Cook for six minutes at 400°F (200°C) until the prosciutto is crispy on the outside.
  5. Garnish and serve. Transfer the brie bites to a serving plate, then drizzle with the hot honey sauce. Sprinkle over the extra chives and crushed pistachio nuts. Serve right away, while hot and oozy.

Notes

PREP AHEAD: These bites are brilliant for prepping ahead of time. Assemble them, then pop them into the fridge for up to 48 hours before you’re ready to cook them. You want to serve them right after you’ve cooked them, for that gorgeous oozy brie moment.

INGREDIENT NOTES: Camembert is a near-perfect swap for brie here, or you could use mozzarella (the baby bocconcini balls are convenient). Swap the sweet chili jam for cranberry sauce, more hot honey sauce, or your favorite relish.

NO AIR FRYER? No problem. Bake the bites on a parchment paper lined baking sheet at 425°F (220°C) for 12 minutes, until the prosciutto is lovely and crispy on the outside.
