Creamy Chicken Caesar Dip
Caesar salad, but make it a dip. This gorgeously creamy chicken Caesar dip is loaded with juicy chicken, crispy bacon, and parmesan, all folded through a garlicky, Caesar-inspired base. Based on the viral M&S chicken Caesar dip, this homemade version is better, lighter, and gives you more flavor in every mouthful.

- 4 slices of bacon chopped
- ½ cup cottage cheese
- ½ cup cream cheese
- 3 garlic cloves crushed
- 2 teaspoons Dijon mustard
- 2 teaspoons white miso paste
- 1 teaspoon fish sauce
- Black pepper
- ¼ cup grated parmesan
- 7 oz cooked chicken, chopped into small chunks (roughly 200g)
- A handful of chives chopped finely
Cook the bacon. Set a frying pan over medium-high heat, then add the chopped bacon and cook until super crispy, about five minutes. Blitz the dip base. Add ½ cup of cottage cheese, ½ cup of cream cheese, the garlic cloves, 2 teaspoons of Dijon mustard, 2 teaspoons of miso paste, 1 teaspoon of fish sauce and a very good grind of black pepper to the bowl of a food processor, food chopper or blender.Blitz until super smooth and creamy. This will take a couple of minutes. Mix the dip. Transfer the blitzed dip to a mixing bowl, or a serving bowl. Add the crispy bacon, chopped chicken, chives, grated parmesan (keeping aside a little of each to scatter on top to serve). Finish with a very good grind of black pepper, then mix everything into the dip base. Garnish and serve. Scatter the remaining crispy bacon, chicken, chives and parmesan on top, then serve.
