A spritz is a classic drink option for summer (though I love it all year round!) This one, packed full of colour, is a forever favourite for parties and entertaining. The recipe below makes one cocktail, but it’s very easy to scale up – I love making a big pitcher of this for garden parties.
Not only does it look gorgeous, it tastes fresh and summery, with the perfect level of sweetness without it being TOO sweet. This is also a super flexible cocktail – you can make it stronger by skipping the pink lemonade and just using the rosé prosecco, or go the other way and just use pink lemonade. You can play around with it based on your taste and what you like.
Making a batch of strawberry rose ice cubes to serve with the cocktail is a lovely touch too – they’re so easy to make but look fancy – so they’re great for entertaining.
Ingredients
We are really going all out on the pink front here!
- Pink gin. Not only does this add a lovely subtle pink colour, but it also tends to be infused with either rhubarb or berries, working perfectly with the rest of the ingredients.
- Chambord. This raspberry liqueur adds a lovely berry flavour and deep colour. If you can’t find it, you could use grenadine or passoa (passionfruit liqueur).
- Rosé prosecco. Any prosecco will do – it doesn’t need to be anything fancy. Use rosé cava as a substitute, or rosé champagne. You can also use regular prosecco if you like.
- Pink lemonade. I always use zero-sugar lemonade, but you can use regular if you like. If you can’t find pink lemonade, just use regular lemonade or soda water.
To make them extra special, I love to add a strawberry rose rosé ice cube – for that, you’ll need fresh strawberries and a large ice cube tray. I love to use rosé wine to fill the tray, but you can also use water.
Add whatever extra garnishes you like – I love a squeeze of fresh lime juice and a couple of lime slices to freshen it up, but seasonal berries would be lovely too, as would fresh mint or basil leaves.
How to make them
It really is as simple as:
- Adding ice to your desired cocktail glasses.
- Adding the gin and Chambord, then stirring.
- Topping with the rosé prosecco and the pink lemonade, garnishing and serving right away, while cold and refreshing.
How to make strawberry rose ice cubes
These are GORGEOUS little drinks garnishes to have stocked in your freezer. They’re super easy to make but look impressive. Plus, if you use rosé wine like I do to fill the trays, you won’t water down your drink (which is one of the reasons I don’t love using loads of ice in drinks). All you need to do to make them:
- Thinly slice your strawberries. For a large ice cube tray, you’ll probably need two strawberries per cube.
- Carefully fan the sliced strawberries out, then chop off the stem.
- Arrange the strawberries, cut side down, in your ice cube tray, overlapping them so they look (roughly) like a flower. Don’t worry if they’re not perfect.
- Fill the ice cube tray with rosé wine or water, then freeze until solid.

You can if you like, but don’t add regular ice as it will melt and then water down the cocktails. You may want to top it with extra pink lemonade or prosecco when you’re ready to serve, just to freshen up the fizz factor.
With three types of alcohol, this isn’t a weak cocktail. However, you can very much vary how much prosecco you add which will weaken it if you’re worried. Just use more pink lemonade!
Yes, you could, or tequila. Any clear spirit will do here (ideally go for a pink vodka if you can).

For the pink gin spritz –
- 60ml/2oz pink gin
- 30ml/1oz Chambord
- Rosé prosecco
- Pink lemonade
- 1 lime, thinly sliced
- Ice
For the strawberry rose ice cubes –
- Large ice cube tray (a silicone one will make things easier – I like this one from Amazon)
- Fresh strawberries (you’ll need about two strawberries to fill each cube)
Instructions
For the pink gin spritz –
- Mix your spritz. Add a couple of ice cubes to your desired cocktail glass. Pour in 60ml/2oz pink gin and 30ml/1oz Chambord and give it a stir. Top with equal amounts of rosé prosecco and pink lemonade.
- Garnish and serve. Top with the lime slices, then serve right away, while cold and bubbly.
For the strawberry rose cubes –
- Prepare your strawberries. Make thin slices down your strawberry, keeping the stem attached. Gently fan them out and flatten them slightly, then chop off the stem. Try not to chop too close to your cuts – you want the strawberry to stay attached at the base.
- Fill your ice cube tray. Arrange your sliced strawberries upright in your ice cube tray, overlapping them so they (roughly) look like flowers. You’ll probably need two per cube. Fill up the tray with either rosé or water, then freeze until solid.
Notes
This recipe is SUPER easy to scale. It’s basically 2 parts pink gin, 1 part Chambord and then top with your rosé prosecco and pink lemonade.
It’s also easy to make stronger, or weaker. Just use more or less prosecco!
