Prosciutto Wrapped Brie Bites – At a Glance

  • Time: 15 minutes
  • 🍽️ Makes: 12 bites
  • 🛒 Key Ingredients: Prosciutto, brie, sweet chili jam, dried cranberries, chives
  • 💃 Perfect For: Holiday parties, Christmas grazing boards, make-ahead entertaining, whenever you want something that looks fancy but takes minutes.

Why the Brie Bites Work

  • Crispy on the outside, oozy and gooey in the middle. Salty prosciutto wrapped around melty brie is a classic for a reason – I’m yet to meet someone who doesn’t love this combo!
  • Sweet, savory deliciousness. Sweet chili jam and dried cranberries contrast the salty prosciutto and rich brie beautifully, for big flavor in every bite.
  • Perfect party portions. While a whole wheel of brie wrapped in prosciutto is delicious, it’s undeniably messy for sharing. These are brilliantly bite-sized and easy to eat.
  • Speedy, prep-ahead, and air fryer-friendly. They cook in literally six minutes in the air fryer (slightly longer in the oven but still quick), and you can prep them in advance. Perfect for stress-free hosting.
  • Boujee vibes, minimal effort. The kind of unexpected party bite people love and always ask about the next day (very similar to these ridiculously easy and tasty bacon wrapped tater tots).

Ingredients You’ll Need

Ingredients for brie stuffed prosciutto bites laid out and labelled.
  • Prosciutto. You’ll need two slices of prosciutto per bite. Parma ham, serrano ham, or prosciutto work well.
  • Brie. Swap brie for camembert, or go for mozzarella (the baby mozzarella balls are perfect). You don’t need to remove the rind, but do if you prefer.
  • Sweet chili jam. You could use any jam, relish, or chutney you like here! Cranberry sauce would also be excellent.
  • Dried cranberries. I like the sweetness these provide to contrast the salty prosciutto, but you could skip them if you like, or use dried apricots, raisins, or figs.

Step-by-Step: How to Make the Prosciutto Bites

Kate’s Top Prep Ahead Tip

These lovely brie bites are PERFECT for stress-free hosting:

  • Assemble them up to 48 hours in advance.
  • Pop them into the fridge.
  • Air fry (or bake) when you’re ready to serve.

Plus, chilling the bites firms them up, and means you’re much less likely to have any leaking when you cook them.

Prosciutto Bites FAQs

Can I make them ahead of time?

You can form the balls a couple of days in advance – just store them in the fridge until you’re ready to cook them. Once baked, you’ll want to enjoy them right away for the best, oozy, cheesy moment.

Could I use a different cheese?

Camembert is the best swap – it’s very similar to brie (see what I mean with this hot honey harissa baked camembert).

Otherwise, mozzarella is excellent and melts well, though it has a milder flavor. Boursin would be great too.

How do I stop them from leaking?

Make sure you wrap them tightly, and pop them into the fridge to firm up a little before you cook them. If you have a little leakage, it’s not the end of the world, but this should stop any explosions.

Description

Crispy on the outside, oozy and gooey in the middle – these prosciutto-wrapped brie bites look boujee but are secretly very easy. Made in minutes in the air fryer, they’re fab when you want a party appetizer that feels fancy without any pastry or prep faff.

Ingredients

Scale

For the prosciutto wrapped brie bites –

  • 24 slices of prosciutto
  • 1 wheel of brie (roughly 120g150g)
  • Sweet chili jam (or use cranberry sauce, hot honey sauce)
  • Dried cranberries, finely chopped
  • A handful of fresh chives, finely chopped

To serve –

  • 2 tablespoons hot honey sauce
  • A handful of fresh chives, finely chopped
  • 2 tablespoons pistachio nuts, crushed or very finely chopped

Instructions

  1. Prep the brie. Slice the brie into small, even cubes. It’s easier to slice when it’s cold – warm brie will ooze and get messy quickly. Keep the rind on, or remove it if you prefer.
  2. Arrange the brie bites. Lay two slices of prosciutto on a board in an ‘X’ shape, overlapping diagonally. Dollop 1 teaspoon of sweet chili jam in the middle of the ‘X’, then place a cube of brie on top. Scatter a little of the chopped dried cranberries on top, then sprinkle over a few chopped chives.
  3. Wrap the brie bites. Fold and wrap the prosciutto tightly around the filling, then roll it into a ball in your hands. Try to make sure it’s tightly wrapped. Repeat with the rest of the ingredients. PRO TIP: I like to pop the bite into the fridge at this point for about 15 minutes, to firm up and set. This makes it less likely you’ll have any burst when you cook them.
  4. Air fry the brie bites. Place the brie bites, seam side down, in the basket of your air fryer. Cook for six minutes at 400°F (200°C) until the prosciutto is crispy on the outside.
  5. Garnish and serve. Transfer the brie bites to a serving plate, then drizzle with the hot honey sauce. Sprinkle over the extra chives and crushed pistachio nuts. Serve right away, while hot and oozy.

Notes

PREP AHEAD: These bites are brilliant for prepping ahead of time. Assemble them, then pop them into the fridge for up to 48 hours before you’re ready to cook them. You want to serve them right after you’ve cooked them, for that gorgeous oozy brie moment.

INGREDIENT NOTES: Camembert is a near-perfect swap for brie here, or you could use mozzarella (the baby bocconcini balls are convenient). Swap the sweet chili jam for cranberry sauce, more hot honey sauce, or your favorite relish.

NO AIR FRYER? No problem. Bake the bites on a parchment paper lined baking sheet at 425°F (220°C) for 12 minutes, until the prosciutto is lovely and crispy on the outside.
